This style of service allows guests to remain uninterrupted, deep in conversation with their neighbour, as waitstaff seamlessly pass through the space to present elegant meals plated with for maximum visual effect.
For a formal affair that welcomed senior officials to a private home, we set out to create a restaurant quality experience in the intimate dining room space. Serving delicate handmade pea and ricotta tortellini topped with fine pea tendrils and blanched broad beans for entrée, followed by a main course of decadent slow-cooked beef fillet with grilled oyster and morel mushrooms topped with madeira sauce. The service was equally stately, with waitstaff briefed to discreetly spoon the accompaniments on the guests’ behalf.
